Let's get things started with an absolutely scrumptious dip recipe. And
this is not just my personal opinion, although I freely admit to being a
shrimp dip fanatic. Here is what Gail Zweigenthal, former Editor-in-
Chief of Gourmet has to say about it:

"...The following dip, one of the delectable creations of a dear friend -
and wonderful cook and hostess - never fails to elicit raves."

What amazed and gratified me was how close this recipe is to one I
dreamed up
when hostessing a high-school pajama party ( a VERY
long time ago!) and have been making ever since.


Judy Rhymes's Shrimp Dip

1/4 cup packed fresh flat-leafed parsley leaves
1/2 medium onion
2 scallions
3/4 pound cooked cleaned shrimp
4 ounces cream cheese, softened
1/3 cup sour cream
1/4 cup mayonnaise
1 1/2 tablespoons bottled chili or cocktail sauce
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire
1/2 teaspoon minced garlic
1/4 teaspoon lemon pepper seasoning
2 dashes Tabasco

Finely chop parsley and onion. Thinly slice scallions, and coarsely
chop shrimp.
In a medium bowl stir together cream cheese, sour cream and mayon-naise until smooth. Stir in the parsley, onion, scallions, shrimp and remaining ingredients until combined well and season with salt and
pepper. Makes about 3 1/2 cups.


And while we are on the subject of dips, you might want to experiment
with the following ingredients to create a fabulous Smoked Oyster Dip.
I have made this countless times, but never the same way twice...

cream cheese, sour cream, a dab of mayonnaise, chives, garlic, lemon
juice, Tabasco and Worcestershire, smoked oysters (drained and
chopped), chopped toasted almonds, and chopped black olives...
