1/4 cup butter
18 eggs
1 cup sour cream
1 cup milk
1/4 cup chopped onion
Salt
2 tablespoons butter
1/2 pound mushrooms
2 tablespoons dry white wine
2 teaspoons fresh lemon juice
Salt
Freshly ground pepper

Preheat oven to 325 degrees F. Melt 1/4 cup butter in a 9-by-13-inch
baking dish. Combine eggs, sour cream, milk, onion and salt in a large bowl and beat until light and foamy. Pour into dish. Bake until tester inserted in center comes out clean about 35 minutes.
Meanwhile, melt remaining butter in medium skillet Add mushrooms, wine, lemon juice, salt and pepper to taste and sauté until liquid is reduced by half. Arrange mushrooms over eggs. Cut into squares and serve. Serves 8.
