Gigi's Garlic Grits
4 cups water or
low-sodium chicken broth
1 teaspoon salt
Black pepper and cayenne to taste
1 cup quick grits
1/2 pound sharp Cheddar cheese, grated
1/2 cup (1 stick) unsalted butter
3 eggs, beaten to blend
1 teaspoon minced garlic
2 tablespoons grated Parmesan
1 tablespoon minced chives
1 tablespoon minced parsley
Preheat oven to 325 degrees F. Grease a 1 1/2-quart soufflé dish.

Cook until water is absorbed,
stirring constantly about 4 minutes. Remove saucepan from heat and stir in grated Cheddar,
butter, eggs. milk and
garlic. Spoon into the prepared casserole top with garnish
Bake about 1 hour, until knife inserted in center comes out clean.
