ANZAC Cookies
(named after Australian New Zealand Army Corps)
Gourmet Archives

1 cup all-purpose flour
1 cup old-fashioned rolled oats
1 cup chopped walnuts
1 cup sweetened flaked coconut
1 cup granulated sugar
1/4 teaspoon salt
1 teaspoon baking soda
2 tablespoons boiling water
1/2 cup unsalted butter
3 tablespoons Lyles' Golden Syrup

Preheat oven to 325 degrees F. In a bowl stir together flour, oats, walnuts, coconut, sugar and salt. In a small bowl stir baking soda into boiling water.
In a small saucepan melt butter with syrup over moderately low heat. Remove from heat and stir in baking soda mixture. Stir butter mixture into flour mixture, combining well. Form rounded tablespoons of batter into
balls and arrange on a baking sheet. Using palm of hand press balls into dishes about 2 inches in diameter and bake in middle of oven until edges
are golden, about 14 minutes. Let cookies cool on baking sheet.
Makes about 30 cookies.
