Nassau Grits

12 ounces bacon, cut in 1-inch pieces
1 bell pepper, finely chopped
2 small onions, finely chopped
2 cloves garlic, minced
1 cup uncooked grits
Two 15-ounce cans tomatoes, undrained
1/2 teaspoon dried basil, crumbled
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon Worcestershire sauce
1/2 teaspoon hot pepper sauce, such as Tabasco

Fry bacon pieces in Dutch oven. Remove bacon; cool, crumble and set aside. Sauté bell pepper, onions and garlic in bacon drippings. Drain the mixture and discard the drippings.
In the same pan with the onion-and-pepper mixture cook the grits according to package directions. Cut up the tomatoes and add them to the grits along with their liquid. Add the remaining ingredients along with the crumbled bacon. Simmer 30 minutes. Serves 4 to 6.
