Lemon Gem Muffins
Gourmet Archives

 2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup sugar
2 large eggs
1/2 cup fresh lemon juice
1/2 (1 stick) cup unsalted butter, melted and cooled
1 teaspoon vanilla extract

Accompaniment: softened cream cheese

In a bowl whisk together flour, soda, salt and sugar. In another bowl whisk together the eggs, lemon juice, butter and vanilla. Add egg mixture to flour mixture and stir batter until it is just combined. Divide batter among 24 buttered 1/8 cup muffin tins. Bake muffins in upper third of preheated
400-degree F. oven 10 to 12 minutes. Turn muffins out onto a rack, let
them cool. Serve with cream cheese.
