La Belle Cuisine

 


Great-Grandmother's Lemon Pudding

1 cup sugar
1 tablespoon butter
3 egg yolks, beaten
1 heaping tablespoon flour
1 cup milk
Grated zest and juice of 1 lemon
1 teaspoon vanilla extract
3 egg whites, room temperature

In a medium bowl cream together the sugar and butter until smooth.
Add the yolks, flour, milk, lemon juice and zest, and vanilla extract.
In a small bowl beat the egg whites until they are stiff, but not dry.
Fold the beaten egg whites gently into the batter, pour it into a small
baking dish. Place the baking dish in a large pan of hot water and
bake it 40 to 50 minutes at 350 degrees F.
Makes one super-delicious child-pleasing pudding-topped cake!
