Easy Oven Rice

This recipe is ridiculously quick and easy, especially to be so delicious!
I've never served it to anyone who didn't love it and want the recipe. It also
lends itself to versatility, as you can add vegetables to it if you like (I very often include mushrooms and add wine and/or grated Parmesan) and any herbs that appeal to you. (MG)

Preheat oven to 350ºF.

In heavy casserole combine:
1 cup long-grain rice
Two (10 1/2-ounce) cans beef consommé
1 small onion, chopped
1 stick butter or margarine, cut into pieces

Cover and bake 45 minutes. Remove cover and continue baking 15 minutes. Makes about 3 cups of cooked rice.
