Lee Bailey's Lemon Kisses

"These cookies are the invention of my friend
Tom Byrne. They are meltingly good."

1/2 cup (1 stick) unsalted
butter, softened
3/4 cup sifted confectioner's sugar
1 large egg yolk
Juice and zest of 1 lemon
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour

Topping:
Zest of 1 lemon mixed with
1/4 cup sugar

Preheat oven to 350 degrees F. Lightly grease a cookie sheet. Cream the butter and confectioner's sugar until fluffy, about 5 minutes. Mix in yolk thoroughly, then add lemon juice and zest and vanilla. Mix in flour in four portions. Stir well. Drop by the tablespoonful onto cookie sheet. Top
each with a light sprinkling of the lemon zest and sugar. Bake until lightly browned, approximately 12 minutes. Cool on a rack.
Makes approximately 24 cookies.
