Southwestern Hominy

 1 cup chopped onion
2 garlic cloves, minced
Two 15 1/2-ounce cans yellow hominy, drained
2 cups chopped tomatoes
a 4-ounce can chopped green chiles
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1/2 cup shredded Cheddar
 

In a large skillet that has been coated with non-stick cooking spray, sauté onion and garlic until tender. Add hominy, tomatoes, chiles, chili powder, cumin and pepper; mix gently. Transfer the mixture to a 2-quart baking dish that has been coated with cooking spray. Bake, uncovered, 25 minutes at 350 degrees F. Sprinkle with cheese. Bake 5 minutes longer. Serves 4.
