Hominy, Tomato and Green Chile Casserole

1 1/2 cups chopped mild onions
2 garlic cloves, minced
2 tablespoons olive oil
One 15-ounce can white hominy
One 15-ounce can yellow hominy
2 cups peeled, seeded, and chopped tomatoes
One 4-ounce can chopped green chiles
3 tablespoons tomato paste
1 cup grated Monterey Jack cheese (about 3 ounces)

In a skillet cook onion and garlic on oil over moderately low heat, stirring, until onion is softened. Stir in drained and rinsed hominies, tomatoes, chiles, tomato paste and salt and pepper to taste. Simmer the mixture, stirring occasionally, 2 minutes.
Transfer the mixture to a greased 2 1/2-quart baking dish, sprinkle the Monterey Jack over it and bake the casserole 30 minutes, or until the cheese is golden. Serves 4 as an entrée or 6 to 8 as a side dish.

[Okay, I know, some of you would rather have meat included for this to be considered a main dish. No problem...just add some! How about leftover pork
roast, or sliced smoked sausage? Lots of room for experimenting...MG]
