Chicken and Dumplings a la Dom

 DOM???
Okay, here's the scoop: Becky Ford Tull and I grew up together in Jackson MS.
We share fond memories of playing “kitchen” under the big arbor vitae trees in
front of the Ford  house. We “cooked” Mimosa beans, assorted berry peas and
even some mud pies !!
After high school we lost track of each other for many long years. Becky married
a Navy guy, I married an Air Force guy, and we were off to see the world. Thanks
to the internet and a very dedicated group of Murrah High School alumnae who
were determined to reunite the whole class (thanks!) we began corresponding a
few years back.
Curiosity compelled me to ask Becky about her e-mail address at that time,
which was something like dopndom @
yadayada... Turns out that Becky and
Bill's youngest son, Ben, wrote them a note addressed to DOM and DOP
(Dear old Mom and Dear old Pop). The grandchildren later took it from there.
(Now DOM and DOP stand for Dear Old Mamaw and Dear Old Papaw!!)
When Becky's eldest granddaughter was in kindergarten, her teacher asked
who made her hair bows to match her outfits. Hannah quickly replied, “My
DOM,” and was thoroughly disgusted when the teacher didn’t know what a
DOM was !! So now you know...
No doubt you'll enjoy DOM's comfort food as much as I do! It's a great recipe
that does not require your spending the entire weekend in the kitchen. Even
though I still enjoy a cook-a-thon now and again as much as the next crazy ole
broad, I remain forever grateful for such recipes as the following...

Makes 8 - 10 Cajun-size servings or
12 - 14 servings for Normal people.


3 Large Chicken Breasts
3 to 4 Chicken Thighs
1 can Cream of Chicken Soup
1 can Chicken Broth
1 Chicken Bouillon cube
3 cups Pioneer Biscuit Mix (or Bisquick)
1 cup Milk
1/2 stick (4 tablespoons) real butter
Salt to taste
Plenty of black pepper

In a large Dutch oven cover the chicken pieces with water. Boil until
chicken is tender. Remove chicken, cool, debone and cut into chunks.
To chicken stock add the Cream of Chicken Soup, chicken broth, and Chicken Bouillon cube. (You may add 1 soup can of water if mixture
seems too thick.) Stir and heat to boiling.
Combine the Biscuit Mix and Milk. Place on floured board and roll out
very thin into rectangular shape. Cut vertically and horizontally with a
pizza cutter into squares about 1 inch by 1 inch.
Into boiling broth mixture drop squares one at a time (or just a few at a
time). When all dumplings are in broth, add the chopped chicken and
butter. Salt to taste and add plenty of black pepper.
 Cover and reduce heat to simmer. (Be careful that dumplings do not
stick.) Stir gently so as not to break up dumplings. Serve immediately.
Enjoy!!
