Lemon Pepper Chicken

1/4 cup fresh lemon juice
2 garlic cloves, minced
2 shallots, minced
4 fresh thyme sprigs
1 bay leaf
1/2 cup olive oil
A 2 1/2-pound chicken, halved
1 tablespoon freshly grated lemon zest
2 tablespoons freshly ground black pepper

In a large shallow bowl, whisk together lemon juice, garlic, shallots, thyme, bay leaf and oil. Add chicken, turning it to coat it with marinade. Let it marinate, skin side up, covered and chilled, 2 hours. Arrange the chicken, skin side up, on a rack in roasting pan. Sprinkle it with zest, pepper and salt to taste. Roast it in the middle of a preheated 450-degree F. oven 35 to 40 minutes. Serves 2.
