Gigis Pecan Dreams
1 stick (1/2 cup) butter
1/4 cup confectioner's sugar
1 1/4 cups flour
3/4 cup light brown sugar, firmly packed
2 tablespoons flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1 cup finely chopped pecans (or walnuts,
or macadamias - your
1/2 cup flaked coconut
1 tablespoon butter
1/2 teaspoon grated orange zest
1 cup confectioner's sugar
2 tablespoons orange juice
For first layer: Cream butter in small mixing bowl.
Gradually add sugar
and beat until light and fluffy. Beat in egg. Blend in flour. Pat
a 13-by-9-by-2-inch ungreased baking pan. Bake in preheated 325-degree
minutes or until pale golden. Let cool on rack a few minutes.
For second layer: Beat eggs until light and lemon-colored in
mixing bowl. Gradually add sugar and beat until well blended. Mix flour, baking powder and
salt; add to egg mixture. Fold in nuts and coconut. Spread carefully
over first layer.
Bake in preheated 325-degree F. oven 20 to 23 minutes.
For glaze: Cream butter and orange zest. Add confectioner's
sugar and enough orange juice to thin to desired consistency. Drizzle over second
while still warm. Cool on wire rack. Cut into 64 1-inch squares.
