Grandma’s Perfect Peach Shortcake

2 cups sifted flour
2 tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup [1 stick] butter
1 beaten egg
2/3 cup light cream [half-and-half]
4 cups sugared sliced peaches
(6 to 8 peaches)
1 cup whipped cream

Sift together dry ingredients; cut in butter until mixture resembles coarse crumbs. Combine egg and cream. Add all at once to dry ingredients,
stirring just to moisten. Pat dough into greased 8-inch cake pan, building
up slightly around edges. Bake at 450 degrees F. 15 to 18 minutes or
until golden brown. Remove from pan and cool slightly on rack.
With serrated knife split the cake into 2 layers, lifting off top carefully.
Spoon peaches and whipped cream between layers and over top. Cut
into 6 wedges. Serve warm.
