Orange Poppy Seed Bread
Gourmet Archives

2 cups flour
1 teaspoon salt
2 teaspoons baking powder
3 tablespoons poppy seeds
2 tablespoons unsalted butter, melted
1/2 cup plus 2 tablespoons sweet
orange marmalade
1 large egg, beaten lightly
1/2 cup milk
1 tablespoon freshly grated orange zest

In a bowl combine well with a fork the flour, salt, baking powder and
poppy seeds. In a large bowl stir together melted butter and 1/2 cup
marmalade; add the egg and combine mixture well. Add flour mixture
and stir batter until just combined.
Spoon the batter into a buttered 8 1/2-by-4 1/2-by-2 5/8-inch loaf pan
and bake 45 to 50 minutes at 350F. Brush top of loaf with remaining
2 tablespoons marmalade and let loaf cool in pan on rack 10 minutes.
Loosen edge with a knife, turn loaf right side up onto rack and let it
cool 2 hours.
